Ultra-Processed Food Debate: New Study Maps Industry Ties Behind Critical Papers

A new study examining the literature on ultra-processed foods has found that around 90 percent of papers arguing against the standard definition of the category have authors with food industry ties. The result adds a layer of scrutiny to a debate that influences dietary guidelines, front-of-pack labels and the advice shoppers hear about everyday products.

Our recent reporting explored another research story where careful reading of methods, authorship and declared interests mattered at least as much as the headline result itself for readers trying to judge the claims.

    Understanding the Categories

Under NOVA, the classification created by Brazilian nutrition researchers, foods are placed in four groups ranging from unprocessed ingredients to ultra-processed formulations. The final group covers products such as fizzy drinks, confectionery, reconstituted meats and many mass-produced breads and breakfast cereals, characterised by ingredient lists rarely found in home kitchens.

The system’s influence has grown quickly, informing research, media coverage and some government guidance. Its critics argue that processing is a poor proxy for nutritional quality; its advocates say it captures the industrial character of modern food supply better than nutrient labels alone. Regulators, including the US Food and Drug Administration in its labelling work, must decide how much weight such frameworks deserve.

What the Analysis Found About Industry Ties

The new study focused on papers that dispute the ultra-processed definition itself, examining author affiliations, funding statements and declared interests. It found that roughly nine in ten of those papers had some form of industry connection, from direct company employment to research funding or consultancy. The authors stress that an industry tie does not make a paper wrong, and industry-funded research can be rigorous. Their concern is proportion: when one side of a scientific argument is overwhelmingly connected to affected companies, the appearance of an even contest can mislead.

Similar patterns have been documented historically in debates over sugar, tobacco and fossil fuels, which is why journals increasingly require detailed conflict-of-interest declarations. Transparency advocates say the remedy is not to ban industry research but to label it clearly and fund independent replication.

    The Wider Evidence Landscape

It is worth separating three questions that public discussion often merges. First, how should ultra-processed foods be defined? Second, what does the overall body of research say about diets high in such products? Third, who is funding the arguments on each side? The new study addresses the third question for a specific set of papers about the first. It does not replace cohort studies, feeding trials or systematic reviews on health outcomes, and its authors do not claim otherwise. Keeping those layers distinct helps explain why two things can be true at once: the classification debate contains genuine scientific disagreements, and the published pushback against the classification is heavily connected to industry. Policy built on the full picture, definitions, outcomes and interests together, is more likely to command public trust than policy built on any single strand.

    The International Dimension

The definition debate is not confined to one country. Brazil, where NOVA originated, uses it in national dietary guidelines; other governments in Latin America and Europe have adopted processing-based warnings or are consulting on them, while several English-speaking countries have so far preferred nutrient profiling. Because the food industry operates globally, papers published in international journals can influence policy on several continents at once. That reach raises the value of the contested definition, and with it the importance of knowing whose voices dominate the published argument about how it should be written.

    Policy Choices Ahead

Governments face a genuine design problem. Processing-based definitions are simple to communicate but can group dissimilar products together; nutrient profiling is more precise but easier for manufacturers to game through reformulation. Several countries are experimenting with combinations, and the debate documented in the new study will feed directly into those consultations.

Whatever systems emerge, the analysis suggests policymakers should ask a standard question of the evidence before them: who produced it, and who paid? That habit, routine in pharmaceutical regulation, is becoming equally relevant to food policy as the commercial stakes of classification grow.
